Red curry is one of the more popular dishes in the Thai repertoire and is delicious with chicken, fish or vegetable.
- 1 Jar of Red Curry Mix
- 800g Chicken breast
- 400ml Coconut milk
- 1 Red chilli
- 1 Lime leaf
Remove the skin from the breast meat and cut into chunks.
Combine the Red Curry Mix, chicken and coconut milk in a saucepan and cook on medium heat for 20-25 minutes until the chicken is cooked through, stirring from time to time.
When ready to serve, skim off any excess oil and transfer into a serving bowl.
Garnish with a few slices of fresh red chillies and shredded lime leaf.
