This dish was one of the top sellers when I had my lunch shop in Broadgate Circle, London. It is crispy fried chicken thighs in a hot and spicy chilli and ginger sauce with lemongrass. You can recreate this dish at home using the Nonya Secrets Chilli and Ginger sauce combined with the Nonya Sambal curry mix. It is well worth a try.

Ingredients
- 1 jar of Nonya Secrets Chilli and Ginger Sauce
- 1 jar of Nonya Secrets Sambal Curry Mix
- 8 pieces chicken thighs, deboned
- 2 tomatoes, quartered
- 1 teaspoon of sea salt
- 1 teaspoon of white pepper
- 200 ml of water
- Vegetable cooking oil for deep frying
Optional Garnish
- Sprigs of coriander leaves
- Chopped spring onions
Serves 4
Preparation
Leave the skin on the chicken. Rub with salt and pepper and deep fry in hot oil until the chicken thighs are cooked and golden brown. Transfer onto kitchen paper and set aside.
In another saucepan, combine the two jars of sauces and add 200 ml water. Bring to the boil and add the tomatoes.
Add the fried chicken pieces to the chilli mixture and mix well.
When ready to serve transfer onto serving plate and garnish with sliced red chilli, spring onions and coriander leaves.
