Whenever I’m able to get some fresh Dorset crab I make my version of Maryland crab cakes. They are quick to put together and make great party food or starters for a special dinner.

Ingredients
- 2 spring onions
- 1 stalk of celery
- 1 tablespoon of fresh coriander leaves
- 1 fresh red chilli
- 350g white crab meat
- 150g brown crab meat
- 100g mashed potatoes or breadcrumbs
- 100g plain flour
- 200g panko breadcrumbs
- 2 eggs
- 1 cup of vegetable cooking oil for frying
Dipping Sauce
Nonya Secrets Sweet Chilli Sauce
Serves 4-5
Preparation
Finely chop the spring onions, celery, coriander leaves & red chilli. Combine the crab meat with the finely chopped coriander leaves, spring onions, celery and red chilli and mashed potatoes. Add 1 spoonful of the beaten egg into the mixture to bind the mixture together.
Refrigerate for an hour and then shape into 4-5 cm flattened round cakes.
Dust each cake in plain flour, dip into the beaten egg and then into panko breadcrumbs.
Shallow fry over a medium heat for about 3-4 minutes each side until golden brown.
Serve with a bowl of Nonya Secrets Sweet Chilli Sauce as a dipping sauce and watercress salad.
